Maren "May" Hansen (nee Knosgaard), a resident at the Salem Lutheran Rest Home, was 108-years-old.
She died peacefully on February 18.
Mrs Hansen was born in Denmark and emigrated to Australia in 1936.
She married her Danish-born husband Emil a year later.
She and her husband owned and operated dairy farms on Queensland's Darling Downs most of their married life.
After Mr Hansen died at the age of 82, Mrs Hansen moved to Toowoomba where she lived with her sister for a number of years.
She became a resident at Salem in 2010, at the age of 102.
As well as being a beloved mother to her three children, she was also a beloved grandmother, great grandmother and great great grandmother.
Her eldest child Elsi Wieck last year described her mother as a "very positive person and very independent".
"Whenever people have asked her in the past what her secret to long life is, she's said it's because she never eats cake but I'm not so sure about that because she used to bake beautiful cakes, including the most beautiful sponge cakes I've ever tasted."
A private family service was held in Mrs Hansen's honour.
